To gussy up a deli roasted chicken, make almost-instant Warm Chicken Salad With Hot Rhubarb Dressing. Shred that warm chicken into a bowl, toss with greens and whatever fresh vegetables you can muster, drizzle with the zippy dressing and voila! If you like, make the simple sauce ahead and reheat at dinnertime.
WARM CHICKEN SALAD WITH HOT RHUBARB DRESSING
SERVES 4
4 cups mixed baby greens
1 deli roast chicken, torn into bite-size pieces
1 red bell pepper, thinly sliced
4 green onions, sliced
Hot Rhubarb Dressing
In a large bowl, toss first 4 ingredients, drizzle with Hot Rhubarb Dressing and serve.

HOT RHUBARB DRESSING
SERVES 4
1 teaspoon olive oil
2 shallots, chopped
1 teaspoon rosemary, thyme OR oregano
1/4 teaspoon salt
4 cups (1 pound) rhubarb, in 1/4-inch slices
1 tablespoon sugar
In a deep saucepan, heat oil and shallots over medium-high heat for 2 minutes. Add herb(s), salt and rhubarb, sprinkle with sugar and cook, stirring occasionally, until tender (8-10 minutes). Reduce heat to low and keep warm until serving time (or chill for up to 2 days). _________________ Have a mice day. |
