Caramel Pecan Cheesecake Pie

1 8-ounce package cream cheese, softened

1/2 cup sugar

4 eggs

1 teaspoon vanilla extract

1 9-inch deep dish unbaked pastry shell

11/4 cups chopped pecans,

1 cup caramel ice cream topping.



In a small bowl, beat the cream cheese, sugar, 1 egg and vanilla until smooth. Spread into pastry shell; sprinkle with pecans. In a small bowl, whisk remaining eggs; gradually whisk in caramel topping until blended. Pour over pecans.

Bake at 375 degrees for 35 to 40 minutes or until lightly browned. (Loosely cover with foil after 20 minutes if pie browns too quickly.)

Cool on a wire rack for 1 hour. Refrigerate for 4 hours or overnight before slicing. Refrigerate leftovers.

Oh my goodness Nony! Having a family gathering on Saturday to celebrate my parents 55th anniversary and I was looking for a new dessert recipe. Gave this a "test" run today and DH thinks I should spend more time looking at your recipes and less time talking about knitting Laughing Laughing He's a cheesecake lover and really enjoyed this one. Thanks for sharing.

I have a cooking light recipe for cheesecake brownies...may need a test baker and taster for that. Laughing
