1 ½ C flour
½ C wheat flour
1 tsp baking powder
1 tsp cinnamon
½ tsp baking soda
½ tsp ground nutmeg (optional, could also substitute allspice)
½ C butter
1 C packed brown sugar
1 egg
1 C pumpkin
1 tsp vanilla
1 C chocolate chips
½ C chopped walnuts (optional)
Grease cookie sheet (or use parchment paper). Stir together dry ingredients. In a mixer bowl, beat butter for 30 seconds; add brown sugar and beat until fluffy. Add egg, pumpkin and vanilla; beat well. Add dry ingredients to beaten mixture, beating until well blended. Stir in chips and nuts. (Dough will be soft) Drop from teaspoon two (2) inches apart onto greased cookie sheet. Bake 375° F for eight ( to ten (10) minutes.
* I like to use dark chocolate chips, as they seem like little pieces of fudge in the cookies! _________________ Happy Knitting ~Aunt Minnie Purl~ |
