Wearing green on St. Paddy’s Day is tradition, but you don’t want to see that color on your fresh potatoes! Prolonged exposure to light will cause potatoes to turn green. Store your Idaho® potatoes someplace cool, dry and dark — like the pantry, but definitely not the refrigerator. Refrigeration will give your potatoes a starchy taste and texture.

Holly, bring them back, that should not happen. Green potatoes are toxic.
