I've been concocting again... Tonight I put this together for supper...

I had some Tater Tots, so I thawed some, and pressed them into a greased glass pie pan to form a 'crust'..

Then, I beat 5 eggs, and added about 1/2 cup milk... Threw in some frozen onion/pepper blend... I put some finely shredded sharp cheddar on top of the Tater Tot crust.. Poured in the egg mixture, and topped with crumbled pre-cooked bacon.. Baked at 350 for 44 minutes (give or take)...

It was good.. I can see adding mushrooms, too.. or anything that suits your fancy..

I use a recipe like that - got it from a french recipe book & they call it a 'Galette' which mean pancake
Boil potatoes & mash them-add eggs/cheese/bacon/mushrooms/onion/milk & bake - quick & easy & freezes well
What are tater tots? Haven't heard of those

These are tater tots...



They're shredded potatoes that have been formed, lightly fried, and then frozen for commercial sale... You bake them, to finish...

I imagine Crispy Crowns would work, too. They are like tator tots, but shorter in length and, as the name implies, get crispier.

That does sound yummy, GrannieAnnie. I may try that for my bunch.

Ah yes - we do have something similar here -think they are like our potato croquettes
